The Story
El Vergel Estate is the brainchild of the Bayter family, who transitioned from avocado farming to coffee cultivation in 2006 after a market downturn. Guided by coffee expert Miguel Jimenez, they embraced specialty coffee varieties and innovative processes. Their foray into the Koji fermentation process and the unique mosto processing method has set them apart in the coffee community, creating flavors that are vibrant and memorable.
Working closely with experts like Wilder Lazo, the Bayters have modernized their approach to coffee farming. Their commitment to quality and community-building is evident in every cup, reflecting the intricate balance of tradition and innovation at El Vergel Estate.
The Roaster
Lucid Coffee Roasters, founded in 2021 by Stephen Houston, is dedicated to providing coffee that is clear, expressive, and accessible. Emphasizing transparency and education, the roastery connects consumers with producers by sharing detailed information on green coffee prices, roast profiles, and brewing methods.
