The Story
Maria Ramirez is a dedicated producer from Concepción Huista in the Huehuetenango region of Guatemala. Maria’s farm, T’Zun-Witz, sits in an area known for its rich soils and ideal coffee-growing climate, which together create a unique profile of flavors in each cup. Maria’s careful approach to farming ensures that only the ripest cherries are harvested, leaving any under-ripened ones on the tree until they reach full maturity. This commitment to quality is reflected in each harvest, where every cherry is handpicked and processed with great attention to detail.
Once harvested, Maria’s cherries are depulped the same day and then fermented in water for 36 hours, a technique that allows the flavors to deepen and develop. After fermentation, the coffee is washed with clean water and sun-dried on a patio for six days. This meticulous process gives Maria’s coffee its signature notes of ginger biscuit, red apple, and caramel—a cozy, balanced cup with layers of warmth and brightness. Maria’s dedication to her craft brings out the best of Guatemalan coffee and has made her a trusted partner season after season.
The Roaster
Caravan was founded by three Kiwis—Chris, Laura, and Miles—who moved to London in the early 2000s. Their passion for coffee and sustainable practices led to the establishment of Caravan Exmouth Market in 2010. The team prioritizes ecological sustainability by collaborating with importers and farmers who practice regenerative agriculture. They also use energy-efficient roasting techniques that reduce gas consumption by up to 80%. Their commitment to the environment extends to their packaging, which is either recyclable or compostable.
