The Story
La Palma Peru, from producer Leodan Human Villegas, is a standout example of the quality and care that goes into cultivating specialty coffee. Since 2015, Leodan has focused on high-quality varieties like Geisha, Pink Bourbon, and Caturra, perfecting his methods to bring out the best in each one. The washed coffee is meticulously processed, beginning with cherries being soaked, followed by a 24-hour anaerobic fermentation in GrainPro bags. This careful method enhances the unique flavor profile that makes this coffee so special.
Once pulped, the beans undergo a second 36-hour fermentation, before being washed to remove any remaining mucilage. Finally, the beans are dried in a solar dryer for 12 to 21 days, with adjustments made throughout to ensure the beans are dried to perfection. The result is a coffee with clean, crisp notes of apple drops and bright grapefruit—a fresh, vibrant cup that reflects the care and dedication Leodan puts into his craft.
