The Story
The San Antonio coffee is one of three special edition coffees from the 20th anniversary collection, paying tribute to the first coffee that connected Origin and Carlos Pola in 2014. This semi-washed Pacamara is sourced from the same plot and utilizes the same processing method as the original, with some modifications inspired by new techniques developed over the years.
Carlos Pola describes the meticulous process, which begins with a 120-hour anaerobic fermentation with the cherries, followed by depulping and rinsing with clean water. The mucilage is gently stirred off to enhance the flavor profile. The beans are then shade-dried on an African bed for 17 days, resulting in a lively final coffee that showcases intriguing notes of apricot nectar, banana, and sparkling wine.
